Izumibashi
Izumibashi Shuzo, the brewery founded in Ebina in 1857, is now one of the largest in Kanagawa Prefecture. What makes its sake special is that the brewery grows most of its rice in its own fields surrounding the company. The water used for production comes from a well fed by meltwater from Mt. Tanazawa.
The family-owned Izumibashi Shuzo company today experiments with a variety of rice and koji varieties to give its sake even more character. This creates a unique flavor that continues the centuries-old tradition of sake brewing in Japan in a modern way.
